Eggplant Parmesan is one of my favorite dishes. Because it takes awhile to cook, I don’t make it very often. I do, however, make Fried Eggplant regularly. This is so easy and delicious your family will want it again and again.
- 1 eggplant
- 2 eggs
- breadcrumbs (start with 1 cup, you will probably need more depending on how thick you coat the eggplant slices)
- 1/4 cup Parmesan cheese (you may need more if you need more bread crumbs)
- 1 tablespoon extra virgin olive oil
Simple Steps:
1. Slice eggplant in 1/4″ to 1/2″ slices.
2. Combine breadcrumbs and cheese shallow dish.
3. Slightly beat eggs in a shallow dish.
4. Dip eggplant slice in eggs then coat both sides in breadcrumb mixture.
5. Heat oil in non stick pan over medium heat.
6. Add coated eggplant slices to the pan. Cook on both sides until they look like the picture below.
7. Remove from pan.
8. Serve with Marinara Sauce and a side of pasta.
