This is a variation of the sauce I had nearly every Sunday growing up. My mom is the best cook I know! She would get up every Sunday morning before church and get things cooking. After church we would come home and feast. Whenever I eat this sauce, and it’s almost weekly, I think of those Sunday dinners.
- 1 – 12 oz can tomato paste
- 2 onions chopped
- 4 cloves of garlic minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 tsp dried parsley
- salt
- pepper
- 1/2 espresso spoon of sugar
- extra virgin olive oil
Simple Steps:
1. Heat oil over medium heat in a medium-sized sauce pan.
2. Saute onions for 3 minutes. Add garlic for 1 minute.
3. Add tomato paste and allow it to fry for just a minute, be careful not to burn the paste.
4. Using the tomato paste can, add 3 cans of water.
5. Add oregano, basil, parsley, sugar, and salt and pepper to taste.
6. Bring to boil.
7. Turn heat to low and allow to simmer for 40 minutes.
8. Serve over pasta.
9. Enjoy.

Yes, this sauce freezes so well. My tip for freezing sauce is to put a freezer Ziploc bag in a tall glass. Simply pour your extra sauce in the bag, you don’t need extra hands to help you. Zip it closed. Place the bag on a plate in the freezer. Once it is frozen, remove the plate and you have a nice skinny bag of sauce easy to store.
