- extra virgin olive oil
- 1 onion chopped
- 3 garlic cloves minced
- 6 plum tomatoes chopped
- 4 Italian squash chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
- 2 teaspoons dried oregano
- 1 teaspoon dried parsley
- 1 lb pasta
Simple Steps:
- Bring water to a boil in a large pot. Add pasta. Follow recommended time on the box. While the pasta is cooking follow the simple steps below. They should both finish around the same time.
- Heat 2 TBS of oil in a non stick frying pan.
- Add onions to frying pan and saute for 3 – 4 minutes.
- Add garlic and saute for 1 minute.
- Add tomatoes, Italian squash, salt, pepper, basil, oregano, and parsley.
- Allow to cook until pasta is finished, stirring occasionally.
- Add 1 cup pasta water and pasta to the vegetables. Drizzle with oil.
- Remove from heat and serve.
