Summer Pasta 1

Are you looking for something delicious and easy to prepare for dinner?  Try this recipe.  It’s simple and takes less than 30 minutes.

  • extra virgin olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 6 plum tomatoes chopped
  • 4 Italian squash chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 2 teaspoons dried oregano
  • 1 teaspoon dried parsley
  • 1 lb pasta

Simple Steps:

  1. Bring water to a boil in a large pot.  Add pasta.  Follow recommended time on the box.  While the pasta is cooking follow the simple steps below.  They should both finish around the same time.
  2. Heat 2 TBS of oil in a non stick frying pan.
  3. Add onions to frying pan and saute for 3 – 4 minutes.
  4. Add garlic and saute for 1 minute.
  5. Add tomatoes, Italian squash, salt, pepper, basil, oregano, and parsley.
  6. Allow to cook until pasta is finished, stirring occasionally.
  7. Add 1 cup pasta water and pasta to the vegetables.  Drizzle with oil.
  8. Remove from heat and serve.
  9. Enjoy.
