Here is a great recipe I threw together one night when I needed a quick dinner. Not only is it easy and fast, but it tastes fantastic. This has made it into our dinner rotation.
- 1 TBS extra virgin olive oil
- 1 onion chopped
- 4 garlic cloves minced
- 1 cup chopped red, yellow, and orange bell peppers
- 1 lb. ground beef or turkey
- 1 – 15 oz. can black beans
- 1 – 12 oz. package of frozen corn
- 2 TBS ketchup
- ½ cup chicken stock
- 1 TBS all-purpose seasoning (I use Ravens)
Simple Steps:
- Cook corn in microwave or on stove top. Set aside.
- Heat 1 TBS extra virgin olive oil in large frying pan over medium heat.
- Add onions and peppers to frying pan and sauté for 3 – 4 minutes.
- Add garlic and sauté for 1 minute.
- Push onion, pepper and garlic mixture to the edges of the pan. Add ground beef to the center of the pan and brown.
- Drain off fat.
- Add black beans, corn, ketchup, chicken stock and seasoning.
- Cook until ingredients are well incorporated and beans are hot about 10 minutes.
- Remove from heat.
- Serve over rice.
