<p>I made this recipe a few days ago and my family flipped for it.  When that happens, it goes on the blog.  I used this for our main dish and paired it with rice and fresh broccoli, but it can also be used as an appetizer.  Enjoy!</p>
<ul>
<li>1 egg</li>
<li>1/4 cup milk</li>
<li>1/2 cup Italian seasoned bread crumbs</li>
<li>1 lb. ground turkey or ground beef</li>
<li>4 cloves garlic, minced</li>
<li>1/4 tsp. black pepper</li>
<li>1/4 tsp. salt</li>
<li>1 TBSP vegetable oil</li>
<li>1 cup apple juice</li>
<li>1/4 cup reduced-sodium soy sauce</li>
<li>3 TBSP packed brown sugar</li>
<li>1 1/2 tsp. cornstarch</li>
<li>1 tsp. ground ginger</li>
<li>6 green onions, sliced</li>
</ul>
<p>Simple Steps:</p>
<ol>
<li>In large bowl whisk together egg and milk.</li>
<li>Add breadcrumbs and stir until breadcrumbs are wet.</li>
<li>Add ground turkey, garlic, black pepper, and salt; mix thoroughly.</li>
<li>Shape mixture into about 48 one-inch balls.</li>
<li>In 12-inch skillet heat oil over medium heat.  <a href="http://livingbellissima.com/wp-content/uploads/2016/06/IMG_0378.jpg" rel="attachment wp-att-1403"><img decoding="async" class="alignnone size-medium wp-image-1403" src="http://livingbellissima.com/wp-content/uploads/2016/06/IMG_0378-225x300.jpg" alt="IMG_0378" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2016/06/IMG_0378-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2016/06/IMG_0378-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/06/IMG_0378.jpg 1500w" sizes="(max-width: 225px) 100vw, 225px" /></a>Cook meatballs, half at a time, turning occasionally, until brown and crusty on the outside and no longer pink on the inside, about 6 minutes per batch.  Transfer meatballs to paper towel-lined dishes, cover to keep warm.</li>
<li>Drain fat from skillet; wipe out skillet.</li>
<li>In bowl combine juice, soy sauce, brown sugar, cornstarch, ginger, and about 3/4 of the green onions.</li>
<li>In the same skillet over medium heat cook and stir sauce until thickened and bubbly (should be at a full boil).  Cook and stir 2 minutes more.</li>
<li>Return meatballs to skillet to glaze and heat through.</li>
<li>Transfer to serving dish.<a href="http://livingbellissima.com/wp-content/uploads/2016/06/IMG_0379.jpg" rel="attachment wp-att-1404"><img decoding="async" class="alignnone size-medium wp-image-1404" src="http://livingbellissima.com/wp-content/uploads/2016/06/IMG_0379-225x300.jpg" alt="IMG_0379" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2016/06/IMG_0379-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2016/06/IMG_0379-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/06/IMG_0379.jpg 1500w" sizes="(max-width: 225px) 100vw, 225px" /></a></li>
<li>Top with remaining green onions.</li>
<li>Enjoy!</li>

<p>My girls and I LOVE Stuffed Artichokes.  I grew up eating them when I was a little girl.  I love taking recipes from my childhood and sharing them with my children.  I was mentioning to someone today that we were having Stuffed Artichokes for dinner and she asked me to put the recipe on the blog.  I have 10 pictures in this post to help explain how to make them.  This is a super easy recipe that I know you will just love.</p>
<p><a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2808.jpg" rel="attachment wp-att-1316"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1316" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2808-225x300.jpg" alt="IMG_2808" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2808-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2808-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2808.jpg 1500w" sizes="auto, (max-width: 225px) 100vw, 225px" /></a></p>
<ul>
<li>3 artichokes</li>
<li>Italian style bread crumbs</li>
<li>extra virgin olive oil</li>
<li>14 oz. can chicken broth</li>
<li>1/2 cup Romano cheese grated</li>
</ul>
<p>Simple Steps:</p>
<ol>
<li>Cut off the top of the artichoke.  Be careful you can get poked by the tops of the leaves.<a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2807.jpg" rel="attachment wp-att-1317"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1317" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2807-225x300.jpg" alt="IMG_2807" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2807-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2807-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2807.jpg 1500w" sizes="auto, (max-width: 225px) 100vw, 225px" /></a></li>
<li>Cut off the stem so that you have a flat bottom.<a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2806.jpg" rel="attachment wp-att-1319"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1319" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2806-225x300.jpg" alt="IMG_2806" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2806-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2806-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2806.jpg 1500w" sizes="auto, (max-width: 225px) 100vw, 225px" /></a></li>
<li>With your kitchen scissors, cut off the poky tops of the leaves.<a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2805.jpg" rel="attachment wp-att-1320"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1320" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2805-225x300.jpg" alt="IMG_2805" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2805-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2805-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2805.jpg 1500w" sizes="auto, (max-width: 225px) 100vw, 225px" /></a></li>
<li>Run your artichoke under water, pulling apart the leaves to thoroughly clean the center.  Turn it upside down and allow the excess water to drip out.  Dry off with a paper towel.</li>
<li>In a small bowl mix together breadcrumbs and cheese.  I don&#8217;t measure the breadcrumbs, sorry.  I would guess 1 cup for 3 artichokes.  You can always add more as you need.</li>
<li>Hold the artichoke over the bowl of breadcrumb and cheese mix.  Grab a small handful of mix and pour it over the top of the artichoke.  Allow the mix to fall into the artichoke.  Pull apart the leaves and allow the mix to fill in all the empty space.<a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2803.jpg" rel="attachment wp-att-1321"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1321" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2803-300x225.jpg" alt="IMG_2803" width="300" height="225" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2803-300x225.jpg 300w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2803-768x576.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2803-1024x768.jpg 1024w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2803.jpg 2000w" sizes="auto, (max-width: 300px) 100vw, 300px" /></a></li>
<li>Place stuffed artichokes into a large saucepan.<a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2802.jpg" rel="attachment wp-att-1322"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1322" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2802-300x225.jpg" alt="IMG_2802" width="300" height="225" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2802-300x225.jpg 300w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2802-768x576.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2802-1024x768.jpg 1024w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2802.jpg 2000w" sizes="auto, (max-width: 300px) 100vw, 300px" /></a></li>
<li>Pour chicken stock into the bottom of the pan without getting it on the tops of the artichokes.</li>
<li>Drizzle olive oil over the artichokes.<a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2801.jpg" rel="attachment wp-att-1323"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1323" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2801-300x225.jpg" alt="IMG_2801" width="300" height="225" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2801-300x225.jpg 300w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2801-768x576.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2801-1024x768.jpg 1024w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2801.jpg 2000w" sizes="auto, (max-width: 300px) 100vw, 300px" /></a></li>
<li>Cover and bring chicken stock to a slight bubbling over medium heat.  Once you see a little bubbling, not a full boil, turn heat down to medium low.  Simmer for 1 hour 10 minutes or until the leaves easily pull off and the heart is tender.  I use small tongs to remove one leaf and give it a taste test.</li>
<li>When finished they should look like this:  <a href="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2800.jpg" rel="attachment wp-att-1324"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-1324" src="http://livingbellissima.com/wp-content/uploads/2016/04/IMG_2800-300x225.jpg" alt="IMG_2800" width="300" height="225" srcset="https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2800-300x225.jpg 300w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2800-768x576.jpg 768w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2800-1024x768.jpg 1024w, https://livingbellissima.com/wp-content/uploads/2016/04/IMG_2800.jpg 2000w" sizes="auto, (max-width: 300px) 100vw, 300px" /></a></li>
<li>Enjoy!</li>

<p>Here is a lemony twist on making a roasted chicken.</p>
<ul>
<li>1 – 5-6 lb. roasting chicken</li>
<li>5 lemons</li>
<li>Dried oregano</li>
<li>1 TBS Kosher salt</li>
<li>Pepper to taste</li>
<li>Extra virgin olive oil</li>
</ul>
<p>Simple Steps:</p>
<ol>
<li>Preheat oven 425 degrees F.</li>
<li>Cut ends of 4 lemons and cut lemons in half.  Arrange in roasting pan as seen in picture below.  Sprinkle oregano over the lemon halves.<a href="http://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-2.jpg"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-509" src="http://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-2-225x300.jpg" alt="Lemon Roasted Chicken 2" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-2-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-2-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-2.jpg 1500w" sizes="auto, (max-width: 225px) 100vw, 225px" /></a></li>
<li>Rinse chicken and pat dry.</li>
<li>Place chicken over lemon halves.</li>
<li>Cut remaining lemon into 4 wedges.  Sprinkle oregano over the wedges.  Insert wedges into the cavity of the chicken.</li>
<li>Drizzle chicken with olive oil.  Add salt and pepper to chicken.</li>
<li>Roast chicken for 1 ½ hours or until internal temperature is 165 degrees F.</li>
<li>Remove from oven.  Place chicken on a serving dish.</li>
<li>Create an aluminum foil tent to allow the chicken to finish cooking and the juices to remain in the chicken.  Allow the chicken to sit in the tent for 20 minutes.  Don’t allow the tent to touch the chicken.</li>
<li>Remove the tent.  Squeeze lemon halves over the top of the chicken.  Remove lemon wedges from inside the chicken.<a href="http://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-3.jpg"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-510" src="http://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-3-300x225.jpg" alt="Lemon Roasted Chicken 3" width="300" height="225" srcset="https://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-3-300x225.jpg 300w, https://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-3-1024x768.jpg 1024w, https://livingbellissima.com/wp-content/uploads/2014/11/Lemon-Roasted-Chicken-3.jpg 2000w" sizes="auto, (max-width: 300px) 100vw, 300px" /></a></li>

<p>This is a great recipe for those hot summer days you would rather grill than turn on your oven.</p>
<p>2 TBS extra virgin olive oil</p>
<p>Juice of 2 limes</p>
<p>2 TBS honey</p>
<p>A pinch of cumin</p>
<p>2 lbs. chicken breast</p>
<p>Simple Steps:</p>
<ol>
<li>Combine first four ingredients in a small bowl.</li>
<li>Cut chicken breasts into strips.   (I like to purchase the chicken already cut into strips.)</li>
<li>Place chicken and liquid mixture into a Ziploc bag.  Zip the bag and shake gently. <a href="http://livingbellissima.com/wp-content/uploads/2014/08/Grilled-Chicken-2.jpg"><img loading="lazy" decoding="async" class="alignnone size-medium wp-image-295" src="http://livingbellissima.com/wp-content/uploads/2014/08/Grilled-Chicken-2-225x300.jpg" alt="Grilled Chicken 2" width="225" height="300" srcset="https://livingbellissima.com/wp-content/uploads/2014/08/Grilled-Chicken-2-225x300.jpg 225w, https://livingbellissima.com/wp-content/uploads/2014/08/Grilled-Chicken-2-768x1024.jpg 768w, https://livingbellissima.com/wp-content/uploads/2014/08/Grilled-Chicken-2.jpg 1500w" sizes="auto, (max-width: 225px) 100vw, 225px" /></a></li>
